Burger Buns

A classic burger bun recipe perfect for BBQs, breakfast buns or lunchtime rolls.
Ingredients
240ml warm water
3 tbsp warm milk
2 ¼ tsp yeast
2 ½ tbsp caster sugar
1 large egg
495g bread flour
55g plain flour
1 ½ tsp salt
45g soft unsalted butter, cut into cubes
Method 
  1. Mix water, milk, yeast, sugar and egg together in a mixing bowl, leave for 10 minutes until it goes frothy.
  2. Add the flours, salt & butter to the yeast mixture, mix into a dough and knead for 10 minutes until smooth & elastic. The dough should feel soft and tacky but shouldn’t stick to your hands.
  3. Rest in a warm place for 2 hours
  4. Divide into 8 pieces, around 120g each. Shape each piece into a ball and place onto a lined baking tray with a couple of inches between each one.
  5. Cover with a clean tea towel and leave to prove for 1 hour
  6. Preheat your oven to 205ºC
  7. Mix together 1 egg & 1 tbsp milk and gently brush each bun.
  8. Place a tray of water in the bottom of the oven, bake the buns for 15 minutes, turning halfway through.
