Citrus Roast Salmon

Delicious zingy baked salmon with lots of fresh herbs, orange & pomegranate molasses.
4 tbsp extra virgin olive oil
1 tbsp pomegranate molasses
1 tsp sea salt
½ tsp black pepper
Juice ½ an orange
Citrus of your choice, thinly sliced (orange, lemon, grapefruit, kumquat)
Herbs of your choice – parsley, dill, thyme work well
A few garlic cloves, crushed slightly with your hand
  1. Preheat the oven to 120ºc
  2. Make the dressing by mixing together the olive oil, pomegranate molasses, orange juice, salt & pepper.
  3. Place the salmon fillets skin side down on a greased baking tray, top with a handful of your selected herbs, some citrus slices & garlic then pour oven the dressing and bake for 20-25 minutes.
  4. Suitable to serve hot or cold.
